Menu/recipes wanted for lactose free low GI no salt dinner party?

I like to cook and want to put on a dinner party for members of a social club I belong to. I’ve recently been told I have to avoid lactose and eat low GI foods to keep my blood sugar down because I’m borderline diabetic. Also don’t want added salt.
